Healthy Blender Pancakes


I have always loved breakfast! I inherited my love for breakfast from my dad and apparently my son has inherited it from me!
There’s something so relaxing and cozy about sitting down and enjoying a cup of coffee and a good breakfast! Whether it’s a breakfast casserole, yogurt with granola, eggs and bacon, waffles or simply a smoothie on the go, I love it ALL!

A few months ago, in an effort to use some of the oats I had bought in bulk, I stumbled across an Oat Blender Pancake recipe! I gave it a try and boy has it been a favorite ever since! It’s a healthier alternative to our previous pancake mix, super filling and extremely quick and easy! My son and I dump all the ingredients into our blender, blend it into a batter and pour straight onto the skillet from the blender pitcher! (Which is why he calls them our “Smoothie Pancakes”! 😉)

Ingredients:

  • 2 cups oats
  • 1 ripe banana
  • 1 egg
  • 1 cup milk (or almond milk)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 Tbs maple syrup

(This is the syrup we use.)

I find this recipe makes about 9 or 10 medium pancakes.

Directions:

Start with adding only the oats to the blender and blend thoroughly into an oat flour. All that’s left after that is to add the remaining ingredients and blend well!
I have tried both an iron skillet and a large electric skillet to make the pancakes. If you’re going for speed and/or quantity obviously go for the larger option that can make several at a time. But if you’re only making a handful or have the time, the iron skillet is my favorite choice for cooking these pancakes! The iron skillet gives it more of the crispy edges that I prefer.

Reasons I love these pancakes include their hearty oat flavor and grainier texture along with being able to make these a healthier alternative to traditional pancakes. They are gluten free and can be dairy free as well if desired!
